Grabbing a Slice: Your Guide to Pizza Shop Supplies

Check out our guide to pizza shop supplies.

When you’re opening a restaurant, there are lots of supplies that you will need. When the restaurant is going to be a pizza joint, those supplies become even more specific. Whether you hope to specialize in New York style, Chicago style, or something else, consider these as some of the most important tools you will need. If instead of a restaurant, you simply want to upgrade your pizza game at home, these tools should still be on your list.

Bench Scraper

Bench scrapers are a very important and multi-use tool. They are handy for cutting pizza dough to make smaller crusts. They are also handy for scraping up bits of leftover dough after rolling out the dough. This makes you more efficient because it is easier to clean your surface and you waste less dough. Finally, this tool can also be used to pick up and move sliced ingredients for the cutting surface to the pizza.

Scale

Measuring cups and spoons are not completely accurate, and when it comes to baking, ingredient quantity is key. Using a scale ensures that the right amount of each ingredient goes into the dough each time. Using a digital scale makes this even easier. Of course, the scale can also be used for other tasks in the kitchen including making sure you have consistent toppings each time.

Pizza Wheel

A pizza wheel is usually the go-to tool for slicing pizzas because it rolls smoothly through, cutting the dough without disrupting the cheese and toppings. When you use a knife instead, dragging it across often causes all the cheese to slide along with it.

Pizza Peel

Pizza peels are the long-handled paddle-like instruments that you use to place the pizza in the oven (aka “launch it”) and to take the baked pizza back out. You might assume that you only need one of these for both uses, but that’s not the case. Raw pizza dough tends to stick to metal pizza peels much more than wood ones. When launching your pizza you should always use a wooden pizza peel. The wooden one won’t work when retrieving your pizza, however, because they’re usually too thick to fit under the pizza. Here, the metal pizza peel is what you need to slip under the cooked pizza and bring it out.
